90 minForget rolling out pie crust. This clever beef pie builds its own.
A cheesy batter made with cheddar, flour, milk, and baking powder goes into the baking dish first, then the beef and vegetable filling gets poured right on top.
Don’t stir. That’s the magic trick.
As it bakes for an hour, the batter rises up and around the filling, creating a golden, cheesy crust that wraps around tender chunks of beef, carrots, and potatoes swimming in rich gravy.
It’s the kind of stick-to-your-ribs dinner that turns leftover roast beef into something the whole family will ask for again.
Kitchen Tips
- This is a fantastic way to use leftover roast beef, pot roast, or even stew meat
- The “do not stir” step is critical; the batter needs to stay separate so it can rise properly around the filling
- Melt the butter in the baking dish in the oven first so the bottom of the batter gets a head start on crisping
- Let it rest for 5 to 10 minutes out of the oven before serving so the filling thickens slightly and slices hold together better
