Directions

Heat oven to 350℉ (180℃).

Mix ½ cup sugar, flour, and salt in a saucepan.

Blend in 3 egg yolks and milk.

Cook, uncovered on medium-low heat for 10 to 12 min. or until thickened, stirring constantly. Remove from heat; stir in vanilla.

Reserve 12 wafers for garnish.

Spread a small amount of custard onto the bottom of 1½ quart (1½ liter) baking dish .

Layer the dish with ⅓ of the remaining wafers, bananas, and custard. Repeat this process two more times.

Using a mixer, beat the egg whites at high speed until soft peaks form. Slowly incorporate the remaining sugar and continue beating until stiff peaks form.

Spread the mixture over the custard, ensuring that it seals well to the edge of the dish.

Bake 15 to 20 min. Or until lightly browned. Cool slightly. Top with reserved wafers just before serving.
