Balsamic Roasted Green Beans, Red Onion and Toasted Walnuts

Green beans and red onion are tossed with balsamic vinegar, honey, thyme and garlic, then roasted in the oven, which develops the caramelization to the onion, and gives the green beans both great flavor and texture. Then topped with toasted walnuts, a deliciously crunchy and nutty touch!

Ingredients

1 pound green beans
stems ends snapped off
1 each red onion
cut into 1/2-inch thick wedges
1 tablespoon olive oil
or canola oil
1 x salt and black pepper
to taste

1 ½ tablespoons balsamic vinegar
1 teaspoon honey
1 ½ teaspoons thyme
freshly and finely chopped

3 cloves garlic
or as needed, thinly sliced
½ cup walnuts
toasted

Directions

Place the oven rack to the middle.

Preheat the oven to 450℉ (230℃).

Line a large baking sheet with the tin foil.

Spread the green beans and onion wedges on the baking sheet.

Drizzle olive oil over the beans and onions, sprinkle salt and black pepper to taste, toss to coat by hands.

Arrange the green beans and onions in an even single layer. Roast 10 minutes.

Meanwhile add the vinegar, honey, thyme, and garlic in a small bowl, mix until well combined.

Remove the baking sheet from the oven.

Pour the vinegar mixture over the beans and onions, with tongs stir the green beans and onions until evenly coated.

Arrange the beans and onions in a even single layer again.

Return the baking sheet to the oven, and keep roasting until the beans and onions are deeply golden brown in spots and have started to shrivel, about 11 minutes.

Season with more salt and freshly ground black pepper if needed.

Place onto a serving platter.

Top with toasted walnuts.

Serve and enjoy!

The third roasted green beans on the row! Again very tasty! This time we roasted the green beans with red onions that were tossed with balsamic, honey, thyme and garlic, lots of great flavors and textures going on. Toasted walnuts was a perfect final touch, nutty and crunchy, and went very well with the slightly sweet roasted beans and onions. Another definite keeper!
