This stroganoff swaps the traditional sour cream for cubed cream cheese, which melts into a thick, velvety sauce that clings to every strip of steak and every slice of mushroom.

The twist? It all happens in the microwave. Butter, steak, onions, and mushrooms cook in stages in a single dish, then the cream cheese and milk go in to melt down into the sauce. No juggling multiple pans, no babysitting a stovetop.

Serve it over hot egg noodles tossed with parsley and you’ve got a weeknight dinner that punches well above its effort level.

Kitchen Tips

  • Cut the steak into thin, even strips so they cook through uniformly in the microwave.
  • Cube the cream cheese small so it melts quickly and smoothly. Stir every minute or so to help it along.

Directions

Place 3 tablespoons butter or margarine in a deep, 2-quart, dish.

Melt in Microwave Oven 30 seconds.

Add steak strips to butter and heat, uncovered, in Microwave Add onion, mushrooms and seasoning to meat. Heat, uncovered, in Microwave Oven 4 minutes. Add cubed cream cheese and milk to meat mixture and heat, uncovered, in Microwave Oven 4 minutes or until cheese melts. Stir occasionally. Serve over hot parsleyed noodles.
