Baked Broccoli, Ham & Cheese Rollups
Tender-crisp broccoli wrapped in ham slices and covered with a velvety smooth cheese sauce. Baked in the oven until bubbly. Kids love it.

Directions
Preheat oven to 350℉ (180℃) F.
If using frozen broccoli cook according to package directions until just tender. If using fresh broccoli, divide into evenly sized florets and steam until just tender and cools.
While broccoli is cooking, melt the butter in a heavy saucepan.
Whisk in the flour, dry mustard, cayenne pepper and nutmeg; cook for 1 minute while whisking constantly.
Gradually whisk in the milk. Cook, stirring constantly, until thickened.
Turn off heat and add the cheese and continue stirring until cheese is melted. Do not overcook.
Divide broccoli spears into 6 portions, splitting large stalks as necessary. Alternate direction of flower ends within each portion.
Arrange the broccoli portions on and parallel to narrow end of each ham slice, extending flower ends over edges of ham. Roll as for jellyroll with broccoli in the center of each rollup.
Carefully arrange the stuffed rollups in a baking dish with seam side down. Pour the cheese sauce over rollups.
Bake until sauce is bubbly, about 20 minutes and serve.
Variation
Use asparagus instead of broccoli and prepare the same way. Substitute a Mornay sauce instead of cheese sauce if desired.
