Amazingly Delicious Gumbo

Ingredients

2 pounds shrimp
chicken, or crawfish
1 stick margarine
or butter

1 large onions
chopped
1 stalk celery
chopped

3 quarts water
*
1 tablespoon scallions, spring or green onions
2 cans tomatoes
*
2 cups okra
cut up
*
2 tablespoons vegetable oil
4 tablespoons all-purpose flour
1 large sweet red bell peppers
chopped
2 cloves garlic
chopped
4 tablespoons worcestershire sauce

Directions

Fry fresh okra in oil; do not burn, add oleo and flour. Make roux. Add onion, celery, bell pepper and garlic. Sauté until soft.

Add water and Worcestershire sauce. Add the tomatoes. Cook for 1 to 2 hours. Add the meat of your choice. Let simmer for 30 minutes. Serve with rice.
