Amazing Eggnog Quick Bread

 

This delicious treat made with a bit of rum extract is perfect for the holiday season!

Ingredients

2 large eggs
1 cup sugar
1 cup eggnog
½ cup butter
or margarine
2 teaspoons rum extract

1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon nutmeg

Directions

Heat oven to 350℉ (180℃). Grease bottom only of a 9x5 loaf pan.

Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla. Blend well. Lightly spoon flour into measuring cup; level off.

Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.

Bake for 45 - 50 minutes or until a tooth-pick inserted in center comes out clean. Cool 10 minutes, remove from pan. Let cool completely.
