Moist applesauce cake with molasses, cinnamon, and raisins baked in a square pan, then glazed with lemon icing while still warm: tender, spiced, and just sweet enough.

Fold in raisins, bake in an 8×8 pan at 350 degrees for half an hour, and glaze with powdered sugar mixed with lemon juice while the cake’s still warm.
The applesauce keeps it incredibly moist, molasses adds deep caramel notes, and that lemony glaze cuts through the spice with bright citrus.

In a medium mixing bowl combine flour, baking soda, cinnamon, and salt.
Cut in butter or margarine until the mixture resembles coarse crumbs.
In a small mixing bowl stir together egg, applesauce, and molasses; stir into flour mixture just until moistened.
Stir in raisins.
Turn into a greased and floured 8×8×2-inch baking pan.
Bake in a 350℉ (180℃) oven for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean.
Cool in the pan 15 minutes.
Remove from pan, if desired.
Combine powdered sugar and lemon juice; spread over warm cake.
Serve warm or cool.
