Moroccan Chickpea Soup (Hasa Al-Hummus)
A delicious marsala recipe made with shredded zucchini, spinach and banana peppers. Tastes great when served over basmati rice.
This dish is best at room temperature, although it is good hot or cold also. I have given just the basic recipe; you can add all kinds of things, like corn, fresh tomatoes, cilantro, scallions, blanched chayote squash, etc.

the key to salsa verde is the tomatillos (tomate verde -- NOT just a green tomato)...don't know where you're from, but if it's the west or southwest, you'll probably find them in the super...if not, they are available canned in a mexican food section.
