Parchment-wrapped potato parcels: microwave papillote packets of sliced ham, potato, zucchini, winter squash, and red pepper with lemon and basil. A 15-minute single-serve dinner, no dishes to wash.

This is the microwave hack that French cooking techniques accidentally inspired. En papillote normally means ‘baked in parchment’ in the oven, but steam does the same job in a microwave in a fraction of the time. Sliced potatoes, zucchini, winter squash, and red pepper stack over cooked ham inside a parchment square, get sealed into a parcel, and emerge tender and aromatic after 14 minutes of microwaving.

The parchment traps moisture, so the vegetables steam in their own juices along with the lemon juice, basil, and red pepper flakes tucked inside. Ham on the bottom keeps the potatoes from sticking to the paper and lends salty-smoky seasoning that infuses everything above it.

Thin, even slices matter. Thick chunks won’t cook through in the time given. Aim for about ⅛ inch; a mandoline makes this easy.

Each packet serves one; scale up as needed but don’t crowd the microwave. Serve directly from the parchment for a dramatic steam-release moment at the table.

Kitchen Tips

  • Slice vegetables uniformly. Uneven thickness means some pieces overcook while others stay raw.
  • Fold the parchment tightly; loose packets leak steam and cook unevenly.
  • Microwaves vary in power. Check after 10 minutes and add time as needed.
  • Let the packet rest 3 minutes after cooking. The steam continues cooking inside.

Variations

  • Swap chicken, smoked sausage, or white fish for the ham.
  • Add a teaspoon of pesto or a pat of butter inside each packet for richness.
  • Finish with fresh herbs (parsley, chives, dill) after opening.

Directions

Cut two 15-inch squares kitchen parchment.

For each packet: Place half the ham on center of parchment square.

Top ham with half the potato slices, overlapping, then top with half the remaining vegetables.

Sprinkle with half the remaining ingredients. Fold two sides of the parchment over the ham and vegetables in letter fashion.

Grasp the two shorter open ends and pull up to meet.

Fold down the open ends twice to seal.

Repeat for second packet. Place in single layer in shallow microwave-safe dish.

Microwave on HIGH 7 minutes.

Rotate packets half turn; microwave on HIGH 7 more minutes.

Let stand 3 minutes; open one packet and check to be sure potatoes are tender.

If potatoes are not cooked through, rewrap and microwave on HIGH a little longer.
