A yummy salad for a nice hot day.

Ingredients

2 slices feta cheese
crumbled (with your fingers)

1 bunch mixed salad greens
washed and sliced
*
½ stalk scallions, spring or green onions
finely sliced
*
¼ whole sweet red bell peppers
chopped (red bell pepper)
*
1 small tomatoes
halved then sliced
6 whole green spanish style olives
from a jar
*
¼ whole avocados
sliced
*
4 tablespoon salad dressing, italian, low-fat

Directions

Salad greens: For this I usually buy a mix of lettuce, endive, chard, spinach and rocket, although you could use any type of salad greens :)

  1. Toss the salad greens, spring onions, capsicum and tomatoes.

  2. Place the avocado slices and crumbled feta on top of the salad.

  3. Top with spanish olives and italian dressing.

This is the kind of salad I like to try, and I will use arugula and make some homemade dressing, it's going to be great, love all the ingredients in this recipe!
