Start with a handful of mixed greens—lettuce, endive, chard, spinach, and peppery rocket all bring different textures and flavors to the bowl.
Toss with sliced spring onions, sweet red capsicum, and juicy tomatoes for crunch and color.
Top with silky avocado slices and crumbled feta for richness, then scatter Spanish olives over everything and drizzle with light Italian dressing.

Salad greens: For this I usually buy a mix of lettuce, endive, chard, spinach and rocket, although you could use any type of salad greens :)
Toss the salad greens, spring onions, capsicum and tomatoes.
Place the avocado slices and crumbled feta on top of the salad.
Top with spanish olives and italian dressing.
