Soaking flax seeds and goji berries overnight transforms this smoothie into something thick, creamy, and almost pudding-like. The flax plumps into a gel that gives the blend serious body without any banana or yogurt needed.

Strawberries bring bright sweetness, almond milk keeps it dairy-free, and those little goji berries (also called wolfberries) add a subtle tartness along with a boost of antioxidants. A splash of vanilla and optional maple syrup round it out.

Directions

Add flax seeds and wolfberries to a cup or jar, pour in water and soak overnight until the mixture becomes thick and gelatinous.

When ready, place all the ingredients in a blender and blend until completely smooth. Any left-over smoothie keeps for up to 2 days in the fridge, where it will thicken further.
