2½ hrsThis right here is the MVP of every Super Bowl spread, and it never even sees a stove.
Black beans and black-eyed peas get tossed with crunchy bell pepper, juicy cherry tomatoes, fiery jalapeños, and enough garlic to keep things interesting. A bottle of zesty Italian dressing ties it all together, and a couple hours in the fridge lets those flavors meld into something seriously addictive.
Finish with a big handful of fresh cilantro right before serving and watch this bowl empty out before halftime.
Vegetarian, high fiber, and feeds a full house of 32. Grab some tortilla chips and let the crowd go wild.
Pro Tips
- Chill for at least 90 minutes. The marinating time is what turns a simple toss into a flavor bomb. Overnight is even better if you can plan ahead.
- Leave the jalapeño seeds in for more heat. Seeding them tames the fire, so adjust based on your crowd’s spice tolerance.
- Add the cilantro right before serving. It wilts and darkens if it sits too long in the dressing. Fresh is everything here.

Toss with fresh cilantro as needed.
Serve.

Is that a traditional recipe or did you just make it up? I didn't know Texans ate vegetables.
I definitely think this is a traditional recipe from Texas, so they perhaps do eat some vegetables :)
