Texas Cranberry-Jalapeno Relish
Kick up the cranberry sauce with some serious spice!! Thanks to AquaExerciser friend, Lorelyn, for another great cranberry relish recipe!
1 package (12 oz.) Fresh or Frozen Cranberries
1 Whole Lime, cut into small chunks
1-2 Jalapeño Peppers, seeded (I used two)
1 cup Sugar
¼ cup Fresh Cilantro, chopped
1/4 cup chopped green or white onion (optional)
Yield: Approximately 2½ cups
Place the cranberries in food processor fitted with steel blade; process until coarsely chopped. Transfer to bowl. Place lime chunks with peel into food processor and process until finely diced. Add jalapeño pepper(s) and process until evenly chopped. Transfer to a bowl with cranberries. Stir in sugar until well blended. Add Cilantro. Store in refrigerator or freezer.
Cook's note: My family and I are great lovers of onion, so we added the onion to Lorelyn's original recipe.
