Meaty roma tomatoes are the right choice here. They have less juice and more flesh than other tomatoes, which keeps the salsa chunky and scoopable instead of watery. Scallions add a mild, fresh onion bite.

Dice everything to a similar size, stir it together, and let it sit a few minutes so the flavors mingle. Adjust the heat by adding more or fewer jalapenos, or a splash of their brine. Then grab the tortilla chips.
