Ingredients

1 pound sweet potatoes, or yams
baked
½ cup green peas
cold cooked
½ cup pineapple
crushed, unsweetened

3 tablespoons parsley leaves
fresh, chopped
cup salad dressing
8 each lettuce leaves
optional

Directions

Peel and slice sweet potatoes and place in a small bowl.

Add remaining ingredients; toss lightly.

If desired, serve on lettuce leaves.
