Cubed SPAM and broccoli simmer in a rich sauce made from cream of chicken soup, cream cheese, Parmesan, shredded carrots, celery, and onion until everything is thick and velvety.
That creamy filling gets poured into a casserole dish and topped with a cheesy buttermilk pancake-mix batter studded with cheddar, then scattered with sliced almonds.
Bake until the topping puffs up golden and the almonds toast to a nutty crunch.
Kitchen Tips
- Cube the cream cheese small so it melts quickly and evenly into the sauce without lumps.
- Don’t overmix the biscuit topping batter. A few lumps are fine and keep it light and fluffy.
- Let it rest for 5 minutes out of the oven before serving so the filling thickens up and doesn’t run everywhere.

Heat oven to 375℉ (190℃)F.
In large saucepan, combine first 7 ingredients.
Cook and stir until cream cheese is melted.
Stir in SPAM and broccoli; heat thoroughly.
Pour into 2-quart casserole. In medium bowl, combine pancake mix and Cheddar cheese.
In small bowl, stir together milk, egg and oil.
Add to pancake mix; stir until combined.
Spoon topping over SPAM mixture.
Sprinkle with almonds.
Bake 20 to 25 minutes or until topping is golden brown.
