40 minRing in the new year (or any special night) with a steak that looks like it came from a steakhouse but only takes one skillet and 40 minutes.
Beef tenderloin gets seasoned simply with salt and pepper, seared until crusty, then topped with crumbled blue cheese that melts under a covered pan into a rich, tangy blanket.
The real star? Those balsamic-glazed caramelized onions. Slow-cooked with brown sugar, beef broth, and a splash of balsamic vinegar, they turn jammy, sweet, and deeply savory.
Pile them over the cheesy steaks and serve with greens or steamed vegetables for a celebration-worthy plate.
Pro Tips
- Let your steaks sit at room temperature for 20 minutes before cooking for a more even sear.
- Don’t rush the onions. Low, steady heat is what turns them golden and sweet. Stirring too often slows the caramelization.
- Blue cheese is classic here, but goat cheese or feta work beautifully if you prefer something milder.
- For a medium-rare finish, pull the steaks when they hit an internal temperature of about 130 to 135 degrees.
Ingredients
Directions
Heat 1 tablespoon oil over medium heat in a large skillet.
Stir in onions and brown sugar and cook, stirring often, until the onions are tender and golden brown, 15 to 18 minutes.
Pour in broth, vinegar and ¼ teaspoon salt and cook, stirring, until the liquid has almost evaporated, about 4 minutes more.
Put the onions to a bowl with a cover to keep warm.
Clean and dry the pan.
Sprinkle the remaining ¼ teaspoon salt and pepper on both sides of each steak.
Heat the remaining ½ tablespoon oil in the pan over medium-high heat.
Add the steaks and cook until browned, about 4 minutes.
Turn them over and top with cheese.
Reduce heat to medium-low, cover and cook until the cheese is melted and the steaks are cooked to desired doneness, about 4 minutes for medium-rare.
Serve with the caramelized onions, mixed greens or steamed vegetables.
