Roasted Garlic Guacamole

Quick easy and tasty guacamole. Roasted garlic goes very well with the creamy avocado, cilantro and lime juice add the refreshing taste. The toppings give the already-delicious guacamole extra goodness.













Low in Saturated Fat, Low Cholesterol, Cholesterol-Free, Trans-fat Free


For the guacamole:
8 cloves garlic
6 medium avocados
½ cup cilantro
coarsely chopped fresh, loosely packed
2 ½ tablespoons lime juice
fresh, or more or less to taste
¾ teaspoon salt
or to taste
For the garnishes:
¾ cup goat (chevre) cheese
or feta cheese, crumbled
¾ cup pepitas (pumpkin seeds)
¾ cup jalapeño pepper
pickled and thinly sliced
½ cup bacon
crumbled crisp-fried
16 ounces tortilla chips
1 bag, large and sturdy


For the guacamole:

Put unpeeled garlic in a small dry skillet over medium heat, cook, turning often, until soft and blackened in spots, 12 to 15 minutes.

Cool, then slip off the skins, finely chop.

Scoop avocado flesh into a large bowl.

Stir in the garlic, cilantro and lime juice to taste.

Coarsely mash everything together.

Season with salt.

Transfer to a serving bowl and put plastic wrap directly on the surface of the guacamole.

Refrigerate until ready to serve.

For setting up the guacamole:

Arrange garnishes into small serving bowls and put the chips in a large basket.

Serve tortilla chips with guacamole with your own choice of the garnishes.

Excellent. The flavor from roasted garlic and creamy avocado was just delicious. I oven roasted garlic instead of pan, and we served it with some Mexican fresh cheese, some bacon bits, sun-flower seeds, and homemade tortilla chips. It didn't last long, after we shot the photos, we finished up everything within 10 minutes. Hmm, will be making this again soon for sure.
