Slicing the sweet potatoes ⅛ inch thin is key. Thin slices bake through in an hour and soak up the orange glaze from both sides. Thick chunks would need more time and stay drier in the center. Spread them evenly in the dish so every slice gets equal exposure to the liquid.
The glaze ingredients go right on top of the raw potatoes, then the dish gets sealed with foil. That covered bake steams the potatoes tender while the brown sugar and orange juice reduce into a sticky, fragrant coating. Orange zest adds concentrated citrus punch that the juice alone can’t deliver.

- Slice uniformly thin. A mandoline set to ⅛ inch makes this fast and consistent. Uneven slices cook unevenly.
- Keep the foil sealed tight. The trapped steam is what cooks the potatoes through. Loose foil lets it escape and the potatoes dry out.

- Check at 50 minutes. Thin slices may finish before the hour mark. A knife should slide through with no resistance.

- Maple orange: Replace the brown sugar with maple syrup for a deeper, more autumnal sweetness.
- Ginger twist: Add 1 teaspoon freshly grated ginger to the glaze for a warm, spicy kick.

Slice potatoes about ⅛ inch thick; spread evenly in an 8-inch square dish.
Combine orange juice, brown sugar, wheat germ, margarine, orange peel, cinnamon and nutmeg.
Cover dish with foil or lid.
Bake 1 hour, until potatoes are tender.
