50 minBraised red cabbage usually takes an hour or more on the stove, but the microwave cuts that down to 20 minutes while keeping the same sweet-sour, warmly spiced flavor. The key is the marinating step: finely sliced cabbage sits in a vinegar mixture with whole cloves, peppercorns, a bay leaf, coriander seeds, and sugar for 15 minutes to an hour before cooking. This pre-soak jumpstarts the flavor infusion.
Tart apple goes in with the cabbage for the microwave step, softening into the mix and adding a fruity sweetness that balances all the vinegar’s acidity. The whole spices perfume the cabbage as it steams under the covered dish, then get fished out before serving.
Stirring every 5 minutes during the 20-minute cook ensures even tenderness. The edges cook faster than the center in a microwave, and regular stirring prevents some pieces from going mushy while others stay crunchy.

Directions
Finely slice cabbage; place in large bowl.
Mix together vinegar, sugar, cloves, peppercorns, bay leaf and coriander seeds; mix with cabbage.
Let stand for at least 15 minutes or up to 1 hour to blend flavors.
In 12 cup microwave-safe dish, microwave at High for 1 minute.
Stir in cabbage mixture along with apple; cover with lid or vented plastic wrap and microwave at High for 20 minutes or until cabbge is tender, stirring every 5 minutes.
Remove bay leaf and cloves.
Season with salt and pepper to taste.
