Microwave Beet, Potato and Feta Cheese soup

 

Quick, easy and delicious. This borscht takes very little time to make. All done in the microwave.

Ingredients

1 cup beets
cubed, canned wiith liquid

½ cup beet juice
*
3/4 cup tomato juice
can use clamato juice
3/4 cup beef stock
1 cup potatoes
leftover boiled (in cubes)
5 cloves garlic
1 x onions
chopped

½ teaspoon salt
½ teaspoon black pepper
½ teaspoon black peppercorns
2 teaspoons balsamic vinegar
½ teaspoon celery salt
¾ cup sour cream
¾ cup cream
3 tablespoons dill weed, fresh
add before heating
½ cup feta cheese
Add after heating and stir

Directions

Add all ingredients to food processor and mix until you reach the consistency you like.

Heat in micro wave for 7 to 10 minutes.

Add warm or room temperature cream and feta.

Mix with spoon.

Add to bowls.

Top with sour cream or plain yogurt.

Sprinkle with fresh dill and/or feta.

Enjoy!
