Ingredients

2Lbs Red potatoes (16 to 20 small)

2c Mayo

1/4c Dijon mustard

1Tbsp Pureed canned chipotles

2Tbsp Lime juice

2 Whole green onions

1 Red onion

1 Jalapeno pepper

4 Garlic cloves

3Tbsp Cilantro

1/2Tsp Cayenne

Salt/pepper

Directions

In large pot of salted water over high heat, boil potatoes 15 minutes; Drain and cool

Combine all ingredients in large bowl; Add potatoes and mix through

Chill before serving
