Came up with this delicious key lime slice recipe while in Key Largo, Florida. Similar to the Aussie Lemon slice but with a twist of the keys.

Directions

Preheat oven to 350℉ (180℃).

In a medium bowl, add the melted butter, sugar, vanilla and salt; mix with a wooden spoon. Sift over the top the flour and cornstarch. Mix together with a wooden spoon until a dough forms.

Line an 11 x 7 inch baking pan with parchment paper allow one inch to overlap on all sides. Press the dough evenly into the pan (on top of the parchment paper). Use a spoon to press down and level it out as evenly as possible.

Bake the base for 15 to 20 minutes until set and just beginning to turn golden.

Meanwhile whisk together the eggs, lime (or lemon) zest, sugar, key lime juice, flour and salt in a bowl.

Once the base has finished baking, whisk the key lime mixture again and pour evenly over the top of the base.

Return to the oven and bake for 15 to 20 minutes until the key lime topping has just set.

Allow to cool completely and dust icing sugar over the top.

Remove from the pan and slice into 24 squares.

Thanks, Bonnie. When we bake goods, if we can, we always use whole wheat flour to replace some or entire white flour. Whole wheat flour is good for our body :)
