70 minThese little party appetizers are as much craft project as recipe, and that’s exactly why kids love them. You bake mini shortcrust pastry baskets, fill them with a savory mixture, then decorate them to look like tiny edible baskets, complete with a pastry handle.
The shells start with a simple rubbed-in shortcrust: cold butter worked into flour until it resembles breadcrumbs, bound with a little egg yolk and water, then chilled so it rolls and holds its shape.
The filling is a kid-friendly mix of crumbled smoked salmon, potato, red onion, and garlic, bound with beaten egg so it sets like a tiny quiche as it bakes.
The fun finish is piped mashed potato tinted with food coloring, swirled on top like frosting.
They’re bite-size, hold up on a party table, and look far more impressive than the effort suggests.

- Keep the butter and water cold and work quickly so the pastry stays tender, not tough.
- Chill the dough before rolling so it holds its shape in the moulds.
- Prick the bases with a fork to stop the pastry bubbling up.

Sift the flour.
Place the flour and salt in a large bowl, mix well.
Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
Add ½ egg yolk and water. Mix well with your hand. Try to work quickly.
Wrap the dough and chill for 10 -15 minutes.
Take the dough and roll out 12 inch square and ⅛ inch thick.
Using a rolling pin, cut to round shape (diameter 2 inch), using a pastry cutter or cookie cutter.
Put the pastry rounds on the greased (butter or cooking spray) mould, and pressing down the sides to seal.
Then trim off the excess pastry.
Prick the base with a fork to prevent air bubbles.
In a pan heat one tablespoon olive oil over medium high heat, add garlic and mix.
Add onion, salmon, and potatoes, stir.
Add pepper and salt, mix well.
Place your prepared filling on the pastry and beat the ½ egg.
Pour the egg over the filling.
Bake about 20 minutes at 200 cup degrees or until the crust is golden brown.
Remove from oven and let cool.
After decorating with mashed potatoes
Take a large potato.
Peel and boil.
Drain the water. Smash it. Add 25 gram butter, ½ tea spoon salt, ⅛ tea spoon white pepper and food coloring. Mix well.
