20 minThese foil-wrapped meltaway sandwiches are old-school party food that feeds a crowd with almost zero effort. Chipped ham, chopped hard-boiled eggs, mayonnaise, minced onion, and chili sauce get mixed into a chunky, scoopable filling that loads right into hot dog buns.
A strip of cheese goes on top of each filled bun, then the whole thing gets wrapped in foil and baked until everything is warm through and the cheese melts into the filling. The foil steams the bun just enough to soften it without drying out the edges.
The chili sauce is what sets these apart from a plain ham salad. It adds a tangy, slightly sweet kick that bridges the mild egg and salty ham. Think of it as a retro cousin to a chopped ham slider with way more personality.
Kitchen Tips
- Chop the ham and eggs to roughly the same size. Uniform pieces mix and scoop more evenly. A rough chop works, not a mince.
- Don’t overfill the buns. They need to close around the filling so the foil can wrap tight. Overstuffed buns burst open in the oven.
- Freezer hack: Assemble, wrap in foil, and freeze in a single layer. Go straight from freezer to oven at the same temperature for about 20 minutes. No thawing needed.
- Use a soft cheese that melts well. American, Monterey Jack, or mild cheddar all work great for that gooey pull.
Variations
- Turkey version: Swap the ham for deli turkey and use Swiss cheese for a club sandwich spin.
- Spicy: Replace chili sauce with sriracha mayo for a modern kick.
- Slider style: Use dinner rolls instead of hot dog buns and cut the filling amount per roll for a smaller appetizer format.
