This old-fashioned cookie from Gretchen D'Antico of Merton has a nice flavor and is even better dipped in white chocolate.

Directions

Preheat oven to 350℉ (180℃).

With mixer on medium-high speed, cream butter and granulated sugar until light and fluffy.

Add brown sugar.

Turn mixer to low and slowly add flour.

Add baking soda, salt, vanilla and eggs.

Return mixer to medium-high speed and mix 1 to 2 minutes, until ingredients are thoroughly mixed. (Do not overmix.)

Stir in remaining ingredients by hand.

Cover and chill 1 hour.

Drop by heaping tablespoons onto parchment-lined cookie sheet.

Bake in preheated oven 10 to 13 minutes or until light golden brown.

Remove from oven and let cool completely.

If desired, melt white chocolate discs in microwave on low power in 30-second intervals.

Dip half of each cookie into melted chocolate or drizzle lightly with a fork over cooled cookies.

Allow chocolate to set completely before storing.

Note: To bake as a bar cookie, spread prepared dough in 15-by-10-inch jellyroll pan and bake 20 to 25 minutes.

After pan cookie is cooled, drizzle with optional melted white chocolate and let set.

Cut into squares of desired size.
