Feather Light Angel Food Cake with Egg White Frosting

Ingredients

cup cake flour
plain
¼ cup cornstarch
cup sugar, superfine
10 large egg whites
11/2 tablespoons cream of tartar

1 cup sugar, superfine
extra
1 teaspoon vanilla extract

11/4 cups sugar, superfine
frosting
1 cup water
frosting
3 large egg whites
frosting

Directions

  1. Preheat oven to 180 degrees celcius
  2. Sift flour and cornflour twice onto a sheet of greese proof paper
  3. add caster sugar and sift again
  4. Beat egg whites in a large bowl
  5. Add cream of tartar and beat until combined
  6. Add sugar gradually beating until it has disolved
  7. Add vanilla essence
  8. Using a metal spoon fold in flour 3 batches
  9. Spoon into a 23 cm angel cake tin
  10. Let it cool down and run a knife along it to loosen it

FROSTING

  1. Combine sugar and water in a pan/pot
  2. Stir over a low heat until mixture boils
  3. Let simmer for 5 minutes
  4. Beat egg whites until stiff peaks form
  5. Pour hot syrup over egg whites
