Boxed mix has nothing on these. From-scratch brownies built on real melted unsweetened chocolate, they come out dense, fudgy, and seriously chocolatey, with that thin crackly top good brownies are known for.

The choice of brown sugar over white is doing quiet work here. Its molasses adds a faint caramel note and extra moisture, which is what gives these their chewy, slightly gooey middle.

Notice how little flour goes in, just half a cup. That low flour-to-chocolate ratio is the whole reason these land on the fudgy side rather than cakey, so resist the urge to add more.

Beating the eggs in one at a time builds structure and helps create that shiny, papery crust. Fold the walnuts in last for crunch, or leave them out if you prefer a smoother bite.

Pull them while the center still looks slightly underdone, since they firm up as they cool.

Directions

Melt chocolate over low heat.

Cream together butter and sugar.

Add eggs one at a time, beating well after each addition.

Stir in chocolate and then flour.

Fold in nuts. Pour into greased 9-inch square pan.

Bake in 325℉ (160℃). oven 25 minutes.

Make about 2 dozens.
