45 minBaking for someone managing blood sugar doesn’t have to mean flat, flavorless cookies. These sugar-free drops lean on bright orange zest and juice to carry the flavor where traditional recipes rely on sugar, with chopped nuts adding texture and satisfying richness.
Vegetable shortening makes the cookie more forgiving than butter when you’re skipping granulated sugar. Shortening holds structure better in a low-sugar dough that would otherwise spread thin across the pan.
A small amount of artificial sweetener is all that’s needed. Use whatever substitute you prefer (stevia, sucralose, monk fruit), adjusted to the brand’s baking conversion chart since concentrated sweeteners measure very differently than sugar.
Drop by tablespoonfuls and bake until set around the edges. They won’t brown deeply like sugared cookies, so don’t wait for color as a doneness cue.
