When you want a bowl of soup that’s packed with vegetables but doesn’t taste like punishment, this is the one.

Garlic, onion, leeks, zucchini, peppers, and mushrooms get sautéed in a sprayed pot (no oil needed), then simmered with spinach, stewed tomatoes, tomato juice, and chicken broth. Chili powder, paprika, oregano, and a touch of cayenne give it real backbone.

The surprise at the end? A tablespoon of crumbled blue cheese melting into each steaming bowl. It adds just enough richness and salt to make this feel like comfort food, not diet food.

Chef Tips

  • Sauté the vegetables for the full 10 minutes so they soften and start to caramelize. This builds flavor without adding fat
  • Swap the vegetables based on what you have. Cauliflower, green beans, or kale all work well
  • Don’t skip the blue cheese garnish. That one tablespoon per serving transforms the whole bowl

Directions

Spray large stew pot with Pam.

Sauté garlic, onion, leek, zucchini, pepper, and mushrooms for 10 min, stirring frequently.

Thaw spinach in microwave until soft, add to vegetables.

Add remaining ingredients except blue cheese, bring to a boil, then reduce heat and simmer about 20 minutes.

Add about 1 tablespoon of crumbled blue cheese to each serving.

Choice of vegetables can vary, depending on availability and personal preferences.
