Curried Yogurt Dressing
This curried yogurt dressing is spicy, creamy and flavorful, it goes well with any your favorite salad, or you can also serve it as a dip with a piece of cracker or fresh vegetables.
Ingredients

garlic
minced, or to taste |

ginger root
finely grated |

scallions, spring or green onions
finely chopped, only green part |

yogurt, plain

lemon juice

freshly chopped |
Directions
In a small saucepan, heat up the oil over medium low heat, stir in onion and cook until dark golden, 3 to 5 minutes.
Stir in garlic, ginger, curry powder, salt, pepper and cumin.
Cook and stir for 40 seconds.
Remove from heat, stir in green onions.
Let cool for a minute.
Stir in yogurt, lemon juice, then chopped mint.
Refrigerate before serving.
