Creme de Brocoli (Cream of Broccoli Soup)

Quick, easy and tasty. This cream of brocoli soup is made of broccoli, milk, sauteed onion and milk.













Trans-fat Free


3 tablespoons butter, unsalted
3 tablespoons all-purpose flour
2 cups stock
1 ½ cups milk
½ each onions
3 cups broccoli florets
1 x salt and black pepper
to taste


In a large saucepan, melt the butter and add the flour.

Stir constantly, and cook for about 1 minute.

Pour in the milk and chicken broth, stir well and bring to a boil.

Add the chopped onion and half of the broccoli.

Bring to a boil, the reduce the heat to medium-low or low to maintain a gentle simmer.

Simmer until the broccoli is cooked 9 to 11 minutes.

Purée with a blender.

Add the remaining half of broccoli into the soup and cook until the pieces are cooked but still slightly crisp, about 6 minutes.

Season to taste with salt and black pepper.

Our neighbour, a French-Canadian lady brought this soup over the other day. She is a great cook and makes all kinds of cool dishes all the time. This soup was absolutely delicious. It's so creamy and cheesy, but without any cream or cheese added. It's also so smooth and packed with flavor. I enjoyed it with some homemade crusty bread, hmmm... Now I am sharing this quick, easy yet tasty recipe with everybody, hopeful you will enjoy it as much as I do :)
