Creme de Brocoli (Cream of Broccoli Soup)

In a large saucepan, melt the butter and add the flour.
Stir constantly, and cook for about 1 minute.
Pour in the milk and chicken broth, stir well and bring to a boil.
Add the chopped onion and half of the broccoli.
Bring to a boil, the reduce the heat to medium-low or low to maintain a gentle simmer.
Simmer until the broccoli is cooked 9 to 11 minutes.
Purée with a blender.
Add the remaining half of broccoli into the soup and cook until the pieces are cooked but still slightly crisp, about 6 minutes.
Season to taste with salt and black pepper.
