A simple, yet succulent pot roast that can be made in a slow cooker or your oven!

Ingredients

6 each carrots
peeled, diced
2 cups potatoes
peeled, diced
2 pounds beef
pot roast
1 x salt
to taste

1 x black pepper
to taste

1 cup tomatoes
canned
1 cup coffee
black
1 cup water

Directions

Put vegetables in cooker. Add beef, sprinkle with salt and pepper. Add tomatoes and liquids. Cover and cook on low 8 to 10 hours or until tender. If desired, thicken with flour and water base.
