No-bake chocolate nut chews with peanut butter, oats, cocoa, and salted peanuts. A stovetop candy that sets on waxed paper with no oven required.

These no-bake chocolate drops go by many names (preacher cookies, cow patties, mud cookies), but the formula is always the same: a hot cocoa-sugar-butter mixture stirred into peanut butter and oats, then dropped onto waxed paper to set. Simple, fast, and dangerously addictive.

The boil time is everything. A full 2 minutes of rolling boil after the mixture bubbles across the top is what sets the candy properly. Underbooling leaves you with cookies that never firm up and stay a sticky mess. Overboiling makes them dry and crumbly.

Peanut butter melts into the hot sugar mixture off the heat, binding the oats and peanuts into fudgy, chewy clusters. The residual heat is enough to melt it smoothly without cooking it further.

Pro Tips

  • Use quick oats, not old-fashioned rolled oats. Quick oats absorb the hot mixture better and give a smoother, more uniform texture. Rolled oats stay too chewy and distinct.
  • Stir constantly during the 2-minute boil. The evaporated milk and sugar scorch easily on the bottom of the pan, and burnt sugar is bitter.
  • Drop the cookies quickly once the oats are mixed in. The mixture sets fast as it cools, and waiting too long means it hardens in the pot.
  • Use salted peanuts. The salt against the sweet chocolate-peanut butter base is what makes these impossible to stop eating.

Variations

  • Coconut chocolate chews: Add ½ cup shredded coconut along with the oats for a tropical twist.
  • Butterscotch version: Skip the cocoa entirely and add butterscotch chips instead of peanut butter for a completely different, caramel-flavored cookie.

Directions

Mix in a heavy 2 quart saucepan, sugar, cocoa, milk and butter.

Stir over medium heat until mixture bubbles all over top.

Boil and stir 2 minutes more.

Remove from heat. Stir in until melted the peanut butter, add the vanilla, uncooked quick rolled oats and nuts.

With 2 teaspoons, drop on waxed paper.
