40 minThink of these as the fanciest brownie bites you’ll ever make. Melted butter and chocolate chips form a rich, fudgy base that gets spiked with Kahlua and espresso for a deep, coffee-laced intensity.
Chopped pecans go into the batter, and a whole pecan half gets pressed into the top of each one before baking. Twenty minutes in a mini muffin tin and you’ve got two-dozen elegant little chocolates that look like they came from a confectionery.
They keep in an airtight container for three days or freeze beautifully for up to a month, making them a smart make-ahead dessert for parties or gifting.
Kitchen Tips
- Melt the butter and chocolate over hot (not simmering) water for a smooth, glossy base
- Fill the mini muffin cups three-quarters full; any more and they overflow during baking
- Press the pecan halves gently into the batter so they sit on top without sinking
- Cool just 2-3 minutes in the tins before transferring; too long and they stick
Ingredients
Directions
In a medium saucepan, bring 2 inches of water to a simmer and remove from heat.
Cut butter into 1-inch pieces and put into a heatproof bowl with the chocolate.
Set the bowl over the hot water and stir until smooth.
Cool slightly.
Whisk in the eggs and liqueur, then stir in the flour, sugar, and espresso.
Chop and stir ½ cup of the pecans into the batter.
Adjust oven rack to middle position and heat oven to 350℉ (180℃).
Line two mini-muffin tins (each with 12 cups) with paper muffin cups.
Spoon batter into cups, filling them three-quarters full and placing a pecan half in the center of each cup of batter.
Bake until batter is set and a toothpick inserted into the centers comes out clean, about 20 minutes.
Cool 2 to 3 minutes in muffin tins, then transfer each piece to a wire rack.
(can store in an airtight container for three days or freeze up to 1 month.)
May be served in the paper cups, or removed from papers before serving.
