Chili with Beef and Beans

A straight-forward chili recipe.

Ingredients

2 tablespoons olive oil
4 cloves garlic
minced
1 ½ teaspoons salt
cumin

1 ½ tablespoons hot chili peppers
16 ounces beans, dried
pinto or kidney
1 large green bell peppers
minced
1 pound ground beef
½ teaspoon black pepper
oregano

1 ½ pounds tomatoes

Directions

Cover dry beans with 3 times their volume of water.

Let stand about 12 hours.

In a pan combine oil, green pepper, onion and garlic.

Cook about 5 minutes.

In a pan brown the ground (minced) beef.

In a pot combine all ingredients and bring to a boil.

Reduce heat and simmer about 3 hours.

Serve with corn kernels on top if desired.
