Weeknight dinner doesn’t get much faster than this.

Tender chicken pieces, crisp broccoli florets, and carrot strips cook together in the microwave in about six minutes flat.

Toss them with fettuccine, a splash of cream, ranch dressing, and a shower of grated parmesan, and you’ve got a creamy primavera that tastes like it took way more effort than it did.

This is the kind of recipe you keep in your back pocket for those nights when the fridge is half-empty but everyone’s hungry now.

Kitchen Tips

  • Cut your chicken pieces the same size so they cook evenly in the microwave.
  • Don’t skip the garlic. Even one finely chopped clove adds a punch that pulls the whole dish together.
  • Swap the broccoli for sugar snap peas or zucchini if that’s what you’ve got on hand.
