This chewy, fruity, nutty bread is delicious on its own or toasted and slathered with butter.

Directions

Preheat oven to 350℉ (180℃). Grease baking sheet.

Combine cherries or cranberries and water in bowl. Let stand 10 minutes.

Drain, reserving juice. Set cherries or cranberries aside.

In a large bowl, combine 1 cup bread flour, whole wheat flour, yeast, and salt.

In a small saucepan, combine milk, syrup, butter, and reserved juice.

Heat to 120 to 130 degrees. Remove from heat and add dry ingredients.

Beat until moist.

Add egg and beat until smooth.

Add remaining flour to form soft dough. It will be slightly sticky.

Beat 2 minutes.

Stir in walnuts and cherries or cranberries.

Knead until smooth, 6 to 8 minutes.

Place in a greased bowl and let raise 1 hour in a warm place.

Punch down.

Shape into 7-inch loaf.

Place on greased baking sheet.

Cover and let rise until double, about 40 minutes.

Bake for 30 to 35 minutes or until golden.

This did not bake well. There is way too much salt for this amount of bread.
