Directions

Set your oven rack to the upper-middle position. Preheat the broiler.

Rinse and pat the chicken completely dry with paper toweling, this helps to encourage browning and more flavor development.

Melt ½ tablespoon butter and ½ tablespoon of olive oil in large nonstick skillet over medium-high heat. Cook chicken until golden brown, about 3 minutes per side and transfer to a plate.

Add the remaining olive oil and butter to the skillet, add onion and cook until just starting to brown, about 3 minutes. Stir in the flour and cook, stirring for about 1 minute.

Whisk in the chicken broth, cream, and sherry and simmer until thickened, about 3 minutes. Return chicken to skillet, reduce heat to low, and simmer, covered, until chicken is cooked through, about 15 minutes.

Transfer chicken to broiler-safe baking dish .

Meanwhile, steam the broccoli until bright green and slightly softened, about 5 minutes.

Add the broccoli and 1 cup cheese to skillet, stirring to combine.

Season with salt and pepper and pour broccoli mixture over chicken.

Sprinkle remaining cheese over top and broil until browned and bubbly, 2 to 4 minutes.
