Gather together almost all the ingredients to make these nutty and tasty maple-leaf crackers.
Get the herbs washed and pat dry.
Fist, let's grind the sun-flower seeds, pumpkin seeds and flax seeds.
Finely chop the mixed herbs, and place 1 tablespoon of each garlic and onion powder into a small bowl.

Mix all the ingredients in a bowl until a firm ball is formed. Knead for 3 minutes, and cover the dough with plastic wrap or damp kitchen towel. Rest for another 20 minutes. Divide into 2 portions.

Add all the dry ingredients into a large mixing bowl.
and the minced fresh herbs.
Pour the oil into the mixture.
Add 1/4 teaspoon of salt.
Pour the honey or maple syrup.
Stir and knead until it forms into a dough.

Prepare 2 baking sheets lined with either parchment paper or silicon mats. On a lightly oiled work surface, roll each piece of dough thinly into a rectangular shape, about 1/16-inch thick. Using a maple-leave shaped cookie cutter, cut the rolled dough into maple-leave crackers.

At the end gather together all the edges, form into another dough, roll and cut out more crackers until almost all the dough is used.

Transfer crackers with a spatula onto prepared baking sheets. Keep ¼ inch space. Pierce crackers with a fork.

Preheat oven to 350℉ (180℃). Bake for 10 minutes at 350ºF. Rotate and bake for another 10 minutes, or until the crackers are deeply browned.

Let cool in the pan for 5 minutes.

Glaze:

Brush with honey-water mixture and sprinkle with kosher salt immediately after removing from the oven. The crackers will get crisp as they cool.

With a cookie lifter, transfer the crackers onto wire racks, and let cool completely.

Storage in an air-tight container for up to 2 weeks.
