Ingredients

¼ cup sherry
dry

1 teaspoon olive oil
5 cups leeks
thinly sliced
1 cup mushrooms, shiitake
thinly sliced

1 teaspoon orange juice
fresh
½ teaspoon orange zest
grated
1 tablespoon apple cider vinegar
1 x salt and black pepper
to taste

Directions

In a large skillet, over medium heat, combine sherry and oil.

Heat to simmering.

Add leeks, stirring frequently for 3 minutes. Add mushrooms and sauté for 5 minutes.

Stir in orange juice, peel and vinegar.

Remove from heat.

Add seasonings and serve warm.
