Ingredients

½ cup sherry

1 teaspoon olive oil
5 cups leeks
well washed
1 cup mushrooms, wild
sliced

2 cups green beans
cut into, 1/3" lengths
1 teaspoon orange juice
½ teaspoon orange zest
grated
1 tablespoon apple cider vinegar
1 x salt and black pepper
to taste

Directions

In a large skillet, heat sherry and oil over medium high heat.

Add leeks and cook, stirring frequently, for 3 minutes.

Add mushrooms and beans.

Sauté until the mushrooms begin to exude moisture, about 5 minutes.

Stir in the remaining ingredients and remove from heat.

Serve warm.
