30 minOrange and chocolate is one of those flavor pairings that just works, and these soft, cakey drop cookies nail it. Fresh orange zest and juice weave through a tender brown sugar dough loaded with semi-sweet chocolate morsels.
The combination of shortening and butter in the dough is deliberate. Shortening keeps the cookies soft and thick instead of spreading thin, while the butter adds flavor that shortening alone can’t deliver. It’s the best of both textures.
Buttermilk makes these cookies remarkably tender. Its acidity reacts with the baking soda to create lift, and the fat in the buttermilk keeps the crumb moist for days. These won’t dry out like crispy cookies do.
Two tablespoons of fresh orange zest is generous, and that’s the point. You want actual orange flavor, not a faint hint. The zest carries the aromatic oils while the juice adds brightness to the batter.
Kitchen Tips
- Cream the shortening, butter, and brown sugar until genuinely light and fluffy. This takes a solid 3 to 4 minutes and creates the airy texture these cookies need.
- Drop by teaspoonfuls, not tablespoons. These are meant to be small, two-bite cookies that stay soft in the center.
- Don’t overbake. Pull them at 12 minutes even if they look slightly underdone. They firm up as they cool on the sheet.
- Use fresh orange zest, not dried. The volatile oils in fresh zest are what carry the orange flavor through the baking.
Variations
- Halloween version: Use orange-colored candy melts mixed with the chocolate chips for a festive October cookie tray.
- Dark chocolate orange: Swap semi-sweet for dark chocolate morsels and add a pinch of espresso powder to deepen both the chocolate and orange flavors.
