Barbecued Beef Buns
Submitted by Izzy
Barbecued beef buns simmered in a tangy homemade sauce with ketchup, vinegar, Worcestershire, and lemon. A great make-ahead recipe for feeding a crowd at cookouts and potlucks.

45 minCooked beef strips simmered in a bold, tangy barbecue sauce and piled onto soft hamburger buns. This is a make-ahead dream: the whole filling cooks in one Dutch oven, refrigerates beautifully, and reheats in minutes.
The sauce builds layers of sweet, sour, and savory. Ketchup and sugar bring sweetness, apple cider vinegar and lemon slices add a sharp tang, and Worcestershire sauce deepens everything with that umami backbone. Mustard and chili powder round it out with a gentle kick. The lemon slices simmer with the beef and get pulled out before serving, leaving behind a subtle citrus brightness you can’t quite place but definitely notice.
Simmering for 25 minutes thickens the sauce so it clings to the beef instead of dripping out the bottom of the bun. Sliced onions melt into the mixture and almost disappear, adding body and sweetness.
Pro Tips
- Use leftover roast beef, brisket, or pot roast here. This recipe is built for repurposing cooked beef.
- The filling actually tastes better the next day after the flavors have had time to marry in the fridge. Make it a day ahead if you can.
- Toast the buns before filling to keep them from getting soggy under the saucy beef.
- If the sauce is too thin after simmering, crank the heat and reduce uncovered for a few extra minutes.
Variations
- Add a splash of liquid smoke for a deeper, pit-smoked flavor without the grill.
- Stir in sliced pickled jalapenos for a spicy version.
- Use pulled pork instead of beef for a Southern-style barbecue bun.
