Country-style pork ribs grilled over indirect heat and basted with a homemade tomato, brown sugar, and lemon barbecue sauce. Ninety minutes on the grill for tender, sticky, finger-licking ribs with sauce to spare.

Country-style pork ribs spend the first hour on the grill away from the coals with the lid down, letting them cook through slowly and evenly without any char.
While they grill, you simmer a quick sauce on the stove: onion and garlic sauteed in oil, then tomato sauce, brown sugar, lemon juice, Worcestershire, mustard, and celery seed bubbled together for 15 minutes.
Brush the ribs with that sauce and grill another 30 minutes until sticky, lacquered, and well done.
Pass the extra sauce at the table because there will be fighting over it.
Pro Tips
- Arrange coals around a drip pan, not directly under the ribs; this prevents flare-ups and ensures even cooking
- Test for medium heat by holding your hand above the grate; you should be able to hold it there for about 4 seconds
- Brush the sauce on only during the last 30 minutes so the sugars caramelize without burning
- Country-style ribs are meatier than baby backs; make sure they’re fully cooked through before serving

In covered grill, arrange medium hot coals around a drip pan.
Test for medium heat above pan.
Place ribs on grill rack over drip pan but not over coals.
Lower grill hood.
Grill for 1 hour.
Prepare sauce: In a medium saucepan cook onion and garlic in hot oil until tender.
Stir in tomato sauce, brown sugar, lemon juice, worcestershire sauce, mustard, celery seed, ½ cup water and ¼ teaspoon pepper.
Simmer for 15 minutes, stirring occasionally.
Brush ribs with sauce.
Grill ribs about 30 minutes more or until well done, brushing occasionally with sauce.
Pass remaining sauce with ribs.
