2½ hrsThis sits squarely between a coffee cake and a cheesecake, with one foot firmly in each camp. A vanilla butter cake batter goes into the springform first, then a sweetened cream cheese layer, then more batter, then a generous streusel topping. The result is a tall, rich slice with three textures in every forkful.
The layering technique matters. Spread two-thirds of the batter into the bottom of the pan and push it gently up the sides if you want the filling completely enclosed. The cheese filling then has nowhere to escape and stays neatly in the middle when sliced. Top with the remaining third before adding streusel.
Use a springform pan, not a regular cake pan. The clean release is essential because the bottom layer is thick and rich. A regular pan flips the cake upside down, which buries the streusel topping. Bake at 350°F (175°C) and let it cool completely before unmolding so the cream cheese layer firms up and slices cleanly.
Chef Tips
- Bring the cream cheese fully to room temperature before mixing the filling. Cold cream cheese leaves lumps that no amount of beating will fix.
- Make the streusel by rubbing the butter into the flour and sugar with your fingertips until it looks like coarse crumbs. Don’t melt it.
- Cool completely before slicing. Warm cream cheese filling is too soft and tears the cake into a mess.
Variations
- Add 1 teaspoon of cinnamon to the streusel for a classic coffee-cake aroma.
- Stir 1 cup of fresh blueberries or sliced strawberries into the cream cheese filling.
- Top each slice with a drizzle of warm lemon curd for a brighter, more tart finish.
