EACH EACH AVOCADOS
ripe, peeled and cut into small chunks

SMALL SMALL RED ONION
finely diced

SMALL SMALL APPLES
gala or red delicious, diced into small chunks *

EACH EACH CELERY STALKS
thinly sliced

8 cups, well washed and tough stems removed *

Directions

To make the dressing:

In a bowl, whisk together all the dressing ingredients until well blended.

Season with more soy sauce, vinegar or red pepper flakes to reach desired taste.

To make the salad:

In a large bowl, toss together avocado, red onion, apples, celery and cilantro until well combined.

Pour ¾ of the dressing into the bowl, and toss until well coated.

In another bowl, toss the watercress gently with remaining dressing until well coated.

To plate:

Divide the watercress among 4 serving plates.

Place the avocado mixture on top of the watercress evenly on each plate.

Serve with some crusty bread if needed.
