This easy yet tasty arugula and mushroom pizza takes no time to make, and it satisfies everyone in your house. The peppery arugula and meaty mushrooms work deliciously well with warm and melted mozzarella cheese. Use whole wheat pizza dough to make it even healthier and still taste delicious.

Ingredients

1 each 100% Whole Wheat Pizza Dough
5 cups arugula (roquette)
baby, well washed and dried, tough stems removed if any
1 tablespoon lemon juice
or to taste, fresh
1 clove garlic
or to taste, minced, optional
2 tablespoons olive oil, extra-virgin
or as needed
1 x salt and black pepper
to taste

For the garlic oil:
cup olive oil
2 cloves garlic
crushed
1 ½ cup mozzarella cheese
shredded, or fresh

2 each mushrooms
sliced
¼ cup black olives
pitted and sliced

Directions

Preheat the oven to 425 degrees F.

Place the crushed garlic and olive oil in a bowl and whisk until mixed well. Set aside.

Add the arugula in a large mixing bowl.

Drizzle the olive oil over the greens.

Season with salt and black pepper to taste. Gently toss until coated.

Set aside.

Prepare the pizza dough according the recipe or use store-bought pizza dough.

Brush the pizza dough with garlic oil and top with mozzarella cheese, mushrooms and olives.

Bake for 12 to 14 minutes or until the crust is lightly browned around the edges, and the cheese is metled and bubbling.

Remove from the oven and top with arugula.

Serve warm.

Among all the greens, arugula is my most loved one because of the peppery taste. Salad of course, I also love making pizza topped with fresh arugula salad, such as this recipe that I made up.

It was easy and tasty, fresh mozzarella would be even better, and I used whole wheat homemade pizza dough. Feel free to use store-bought pizza dough.
