Directions
Heat oil in a medium saucepan, sauté onion until softened, 3 to 5 minutes.
Stir in curry powder and cook, stirring, for 1 minute more.
Add condensed tomato soup and broth or water.
Bring to a simmer.
Whisk in peanut butter and cilantro.
Season with salt and pepper.
Serve hot.
